If you create a new project based on EPESI then yes. This would have to be a significant code change or addition to the existing code to make such a claim.
Just because you are using it or offering it to your customers does not mean that you significantly changed the code/application. The About page is about credits given to individuals, companies and organizations that developed the application or - as seen on the bottom of the page - whose libraries or work was used in the project.
However you can write a simple module which will create an additional Menu->Support->Technical Support item where you could display information about your company and for your users/customers with a link to your web site, forum, support phone number etc. See this for more info: http://www.epesi.org/index.php?title=Add_menu_entry
We plan to add a feature which will allow resellers and hosting providers to change the main logo on the startup screen which will display a customized information. The login screen will have the following elements:
- Custom logo of the company using EPESI
- Optionally - logo, link and brief info about the company providing support (resellers, partners, hosting providers)
- Copyright information which can not be removed or altered as required by MIT license.

This is an oversight on our part. Of course it does not make sense to go to a blank page. Yes, you can remove it. In the next release we will make sure that disabling EPESI Store for regular admins also removes it from the menu.
The point about not removing a link to EPESI Store or renaming it is caused by a number of users who simply do not comply with MIT license. Not only that they remove the copyright notice, replace the logo, but also try to rename any reference or link to our site, forum, etc.
Such actions are not only illegal but completely absurd, here are some examples:

While it is easy to create a link to a bogus donation page (replacing Support EPESI link) this is a dishonest behavior. On the other hand redirecting to some "XYZ Store" is absurd, unless someone can create a clone of our distribution platform - EPESI Store.
Abusers will loose ability to conect to EPESI Store to download additional modules, receive updates etc. We will revoke the license key and invalidate any downloads and purchases.
I don't understant the reason behind such a behavior. It never crossed my mind to rename PHP, Apache, MySQL (the list goes on and on) and claim it as my own software. I wrote about it here: viewtopic.php?f=2&t=519&p=3140#p1983
