Follow these steps to add Permission field to Sales Opportunities module:
- Open admin panel - Record Browser
- Select Opportunities recordset

- Add new field: name it Permission, type Select, source Single Value, order by key, CommonData table: CRM/Access, required true:

Save it and you will have Permissions option in Sales Opportunities module:

Now you need to adjust permissions - open the same recordset, switch to permissions - at this moment there are no restrictions:

You need to change it to look similar to permissions in tasks:

View Access: Employee Permission is not equal to Private or Employees is equal to User Contact
Edit Access: Employee Permission is equal to Public or Employees is equal to User Contact or Customers is equal to User Contact
Delete Access: Employee Created by is equal to User Login
